Vegetable, Basil and Garlic Soup (Soupe au Pistou)

This is a thick, rich vegetable soup in witch pistou, a mixture of garlic, basil, olive oil and tomatoes, is added at the last moment. The word comes from pistar, Provencal fpr "to grind", since this mixture is traditionally prepared in a motar and pestle.

To accomplish that recipe I used Swiss Appenzeller and Cold Smoked Pork Belly, simply delicious!
