Saint-Nectaire is a semi-soft cheese with a washed rind, hailing from the Auvergne region of France. Renowned for its smooth texture and complex earthy, nutty flavors, it is produced using milk from Salers cows that graze on fertile volcanic pastures.

Roquefort is especially famous for its pungent smell and characteristic blue veins of mold that have a sharp tang, as well as its unique production process. It is a white, crumbly, and slightly moist cheese.

Coulommiers is a lesser-known cousin of Brie, although it has been produced for longer. It is smaller and thicker than Brie and with a nuttier flavour, but otherwise has similar characteristics, with a similar buttery colour and supple texture.
