Directions
- beef in cubes,add wine ,marc,bouquet garnie,few peppercorns,1 tablespoon of the oil.Set at least 2 hours.
- Peel ,chop onions,carrots.
- Remove the rind from bacon,cut then,plunge them into a saucepan of boiling water,blanch them.
- Drained the beef on paper towels,reserve the marinade.
- Melt some butter with oil,add bacon,brown them,set aside.
- Add the beef,sate on all sides,season salt and pepper.
- Remove from the pan.
- Add carrots,onions to the pan and saute until tender.
- Return the meat,bacon,marinade,bouquet garni.Bring to the boil,add the garlic clove(unpeeled,lightly crushed.2Hours and 1/2
